Low Waste Holiday: Easter Bunny Brunch

Being in quarantine has forced us all to get a little more creative around celebrations. Here in Bermuda, we are under a shelter in place order which roughly translates to 24 hour lock down. Only essential businesses are allowed to be open, which means birthday cakes, decorations and supplies are all limited. Usually, for Easter, I create my own baskets with all of my kids favorite treats, snacks, fun toys, etc but this year, I had to get creative and wanted to maintain a sustainable, low waste celebration. I decided to do an Easter breakfast (courtesy of the Easter bunny) with lots of sweet, mostly plant based treats!

This is also super fun for just a regular Sunday! Why not brighten up your quarantine weekends with a colorful fun brunch and surprise the kids!

Here are some easy recipes to make your next at home brunch with kids super cute, fun and low waste

Rice Krispy Treats

¼ cup [plant based] butter (Earth Balance coconut spread is my favorite) 6 cups [vegan] marshmallows 6 cups Rice Krispies cereal


1. Melt butter and marshmallows over low heat while stirring

2. Remove from heat and add rice krispies until well coated

3. Press into greased pan and let cool completely

(since it was Easter we pressed some mini eggs into the rice krispies for added fun!)

Graham Cracker Surprise Dippers

1/8 cup [plant based] butter 3 cups [vegan] marshmallows Graham crackers Sprinkles


1. Melt butter and marshmallows over low heat while stirring

2. Remove from heat and dip graham crackers into marshmallows

3. Pour sprinkles over marshmallow dipped graham cracker

4. Serve immediately

Sweet + Salty Pancakes (these are my FAVORITE!)

¾ cup [gluten free] flour (use whatever you have!)

1 ½ tsp baking powder 1 ½ tsp hemp seeds ½ cup Oat Mylk (or whatever milk you have!) 1 egg (or substitute with flax egg if vegan)

1 tbsp melted butter (I like to use the Earth Balance original)

Pinch (or two) Himalayan pink salt


1. Whisk all dry ingredients together

2. Add wet ingredients until batter is smooth.

3. Melt some butter in the pan (don’t skip this!)

4. Pour in your batter. You want these to be crispy on the outside and gooey on the inside!

To serve: top with butter, pinch of salt, maple syrup and a huge dollop of whipped cream! Add sprinkles for fun!

Sweet + Salty Popcorn

Nothing fancy here! We popped a bag of microwave popcorn and poured the rest of the marshmallow mixture from the graham cracker dippers over the popcorn. Add sprinkles and mini eggs and serve immediately!


To finish I chopped fresh fruits, added some fun sugar cookies and marshmallows and arranged it all on the table for a fun edible décor table + brunch!
